Yonah Schimmel Knish Bakery
7 East Houston Street in Manhattan (photographed Summer 1998).
Yonah Schimmel, a Bulgarian (some sources say Romanian) born rabbi, founded his knish bakery in 1890. He began selling his wife's knishes on the beach at Coney Island as well from a pushcart in the Lower East Side. In 1910 he opened this bakery on Houston Street.
Over the years the knish bakery has remained popular due to the quality of the knishes which are baked in the basement's brick oven and brought up to the store by dumbwaiter. I'm happy this bakery has managed to survive the years in an ever changing environment.
